Italian Country Pork

  1. Heat oil in a large non-stick frying pan over medium heat. Cook pork for 3-4 minutes, until browned. Add sauce and bring to the boil. Add mushrooms and reduce heat to low. Simmer, covered for 8 minutes. Stir in beans and simmer a further 2 minutes.
  2. Meanwhile, cook pasta in large saucepan of boiling salted water for 12-14 minutes, until al dente. Drain well.
  3. Fold rocket into pork mixture until wilted. Serve with pasta and cheese.
